The Art of Roasting Specialty Coffee: Precision & Passion

In the pursuit of the perfect cup, many often overlook the fundamental science of roasting. It isn't merely about turning green beans brown; it's a delicate dance of chemistry, thermodynamics, and sensory evaluation.

The Maillard Reaction

As the beans heat up, amino acids and reducing sugars begin to react. This is the Maillard reaction, responsible for the browning of the beans and the development of complex flavor compounds—ranging from toasted bread to floral notes.

First Crack and Development

When the internal pressure of the bean becomes too great, it fractures, emitting an audible 'pop' known as the first crack. This marks the beginning of the development phase. Here, the roaster must carefully control the rate of rise (RoR) to prevent baked or scorched flavors.
